we had fhe at our apartment last night, and so i was in charge of providing the little treat.
gotta love byu.
i decided to keep it festive and bake something pumpkin...and then i remembered this incredible recipe i had from my freshman year up here.
try it.
seriously, it is so good.
got rave reviews.

pumpkin cookies:
4 cups flour (unsifted)
2 cups regular oatmeal uncooked
2 tsp. baking soda
2 tsp cinnamon
1 tsp salt
2 cups semi-sweet chocolate chips
1 1/2 cups margarine/butter
2 cups brown sugar
1 cup granulated sugar
1 egg
1 tsp vanilla
1 (16 oz) can pumpkin
frosting (the infamous recipe):

1 stick butter
1 8oz. package cream cheese
3+ cups powdered sugar
1 tsp. vanilla

mix dry ingredients. whip margarine and sugars. add egg, vanilla, and pumpkin. add dry ingredients. stir in chocolate chips. drop onto cookie sheet. bake at 350 degrees for 10-12 minutes. frost when cooled.

i was just looking through my recipes to make pumplin bread, and found this recipe you had emailed me way back when...i WILL try them!! right now, i have pumpkin bread in the oven...
